Mānuka honey is highly valued across the world. It is used in the finest restaurants, celebrities love it and it’s a key ingredient in many of the best quality skincare products. But what makes it so different to other honey?The answer is methylglyoxal. Methylglyoxal is what gives mānuka honey its antibacterial activity. It is found in other honeys, but in much lower amounts.The concentration of methylglyoxal in the mānuka honey determines its rating. You will see UMF or MGO ratings on genuine mānuka honey.
Manuka rating UMF vs MGO

The UMF, or Unique Mānuka Factor, was the recognised standard for rating mānuka honey for many years. It measured three compounds found in mānuka honey - leptosperin, DHA and methylglyoxal.
Recently, however, further research determined that it is the methylglyoxal content alone that determines the antibacterial activity of the honey, which is what makes mānuka honey so special.
The MGO rating was therefore created to indicate the presence of this valuable compound. It reduces confusion as it doesn’t take into account any of the other compounds or properties found in the honey, just the methylglyoxal content.
You’ll see an MGO (an abbreviation of methylglyoxal) rating on our honeys. It measures how many milligrams of methylglyoxal is in each kilogram of honey.

The minimum amount needed to be classified as mānuka honey (as opposed to a mānuka blend) is 100mg/kg. This would be rated as MGO 100+. MGO 200+ has at least 200mg of methylglyoxal per kg of honey, MGO 300+ is 300mg/kg etc. The higher concentration of MGO in the honey, the higher the antibacterial activity.
