These single origin Certified Organic Cacao Beans are the heirloom Criollo variety of cacao, from the Satipo region of the Peruvian Amazon. The indigenous growers, members of a collective of families, employ a traditional method of permaculture cultivation, planting the cacao trees and other fruit plants under the natural rainforest canopy. The pods are harvested and cracked open, before the beans are removed and fermented, at a low temperature not exceeding 45oC, and dried with their ‘skins’ on. These certified fair-trade beans are free of preservative and any artificial additives, and are non-GMO. Organic cacao beans have a rich, brown colour, a crunchy texture and a decadent full-bodied, tangy chocolate flavour and aroma.
