Huso Dauricus & Acipenser Schrenckii Husa Dauricus, a cross-breed between Kaluga and Amur sturgeon is the largest freshwater fish in the world. Thewildresource can be found in the Amur River basin (Russian Federation & Asia). Kaluga is a semi- anadromous fish, spending some of its life in the salt water but most of its life in freshwater. Our Kaluga Hybridized sturgeon are farmed raised in an environment close to their natural habitat, in fresh drinking water, free of pollutants.Well known for its glossy grey color pearls, with golden highlights and hints of dark amber and olive green eggs with a diameter of over 3 mm.
True caviar is salted roe that only comes from the sturgeon family, a prehistoric fish located in the Northern hemisphere anywhere from North America to China. The three most notable sturgeon species are Beluga, Ossetra, and Sevruga sturgeons. Please note that roe from any other fish -- including pike, paddlefish, salmon and alike is not technically caviar.

Storage
Unopened containers of caviar will typically last4-6weeks. once a container of caviar is opened, it should be consumed within 5 days. Caviar should be stored at a temperature of28-34°F. If caviar is opened and unfinished, plastic wrap should be gently placed over the top of the product before the lid is placed back on the container. It is not recommended to freeze sturgeon caviar.
Serving
Take the caviar out of the refrigerator about 15 minutes before serving to let it adjust to room temperature. Caviar should be served on a surface of the shaved ice, preferably in a glass container, although silver and crystal can also be used. Serve caviar with mother of pearl spoons and dish-ware rather than with metal utensils. If you use metal utensils, it may actually alter the flavor of caviar and result in a metallic taste. Serving it on mother of pearl dish-ware is a sure way to enhance the flavor and impress your guests. Ask about our mother of pearl product line.
