1. Isolation: refers to the degree of isolation of oxygen, water vapor and fragrance.
2. Film strength: good mechanical strength can meet the requirements of various filling and punching machines.
3. Softness and hardness: A proper softness of the casing could make you easy to use it. After stuffing, the sausage feels stronger.
4. Membrane evenness: it reflects the thickness and evenness of the casing membrane.
5. Viscosity of the casing membrane:
(1) refers to the stickiness of the meat of the casing membrane, which can reduce the amount of water in the sausage and avoid the taste of the sausage from getting worse.
(2) refers to the degree of adhesion between each layer of the casing membrane, which makes the casing layout stable and function stable.
6. Tightness of Packing: the outer packing of casing should be tightly sealed to avoid moisture absorption.
