Tagliatelle is an egg paste typical from Central and Northen Italy. They are made with durum wheat semolina and fresh eggs and they are obtained rolling the dough in a thin sheet and cutting the roll (here's the name tagliatella). Classic
recipe requires that tagliatelle has been dresses with bolognese ragout but it can be used mushroom sauces, truffel or
tomato sauce.
